Mirian Iosebashvili is a name synonymous with uncompromising authenticity in the world of natural Georgian wine. As an independent, artisanal producer, Iosebashvili signs each bottle with his own name, taking full personal ownership of the entire process – from organic vineyard cultivation to bottling. These wines are crafted using indigenous methods dating back thousands of years: fermenting and aging on skins in qvevri without selected commercial yeasts, harsh filtration, or added sulfur beyond minimal traces. They are truly living wines that evolve dynamically in the glass, full of wild aromas and unique texture (classic representatives of amber/orange wines). Minadze’s Marani Phersvi is a family winery located in the village of Persati in western Georgia (Imereti region), bordering the Ajameti Managed Reserve. The project is rooted in a multi-generational legacy founded by great-grandfather Taras Minadze and proudly carried on by the family today. The winery eschews industrial output in favor of organic craft and low-intervention methods. Their wines are fermented in churi – subterranean clay vessels native to Imereti (the regional counterpart to Kakhetian qvevri). Minadze is renowned for preserving and showcasing rare indigenous varieties such as white Tsolikouri, Tsitska, and Krakhuna, alongside red Dzelshavi and Otskhanuri Sapere. These wines are true expressions of their terroir: vibrant, organic, and striking with a crisp minerality distinct from the heavier wines of eastern Georgia.

Perati is a captivating artisanal winemaking project led by talented Georgian winemaker Mariam Minadze. The winery is based in western Georgia’s Imereti region – right in the village of Persati, sharing roots and passion with the Phersvi cellar as part of the Minadze family tradition.
Mariam focuses on limited-edition natural wines, working primarily with indigenous Imeretian varieties like Tsolikouri, Tsitska, and the red Otskhanuri Sapere. Her wines are crafted using traditional subterranean clay churi vessels. Under the Perati label, you will find both complex, structured amber (orange) wines made with extended skin maceration, and lighter whites. Distinct from the heavier profiles of eastern Georgia, Perati wines are celebrated for their mouthwatering acidity, stony minerality, and vibrant notes of citrus, green apple, wild honey, and herbs. A stellar example of low-intervention winemaking driven by elegance and balance.
